Healthy Pancake Muffins

For almost a year, I ran a daycare out of my house. It was a WILD ride! I always wanted to make homemade pancakes and waffles for my kiddos, but let’s be real…frozen is a heck of a lot faster! 

I finally worked through my stash of frozen goods and with an 8 month old who loves food, I decided I needed to make homemade and find a healthy version! 

I stumbled upon this recipe on Google for Whole Wheat Pancakes:

Instead of cooking pancakes, I dumped the batter in a muffin tin and let the oven go to work!

My first batch, I followed the recipe but used Vitamin D milk since that’s what I had. 

I’m not going to lie, my first batch was incredibly bland and a little dry. And I definitely overfilled my muffin cups! Hence batch number 2!

My second batch, I used Unsweetened Almond Milk and upped my cinnamon! These ones came out more moist and flavorful! 

For my third batch, I had a little fun and threw in some mini chocolate chips! Yum!

No matter what I did, I couldn’t shake this bran-like taste!

Then I realized….duh. This is a healthy recipe! 🤦🏼‍♀️ 

Today is the third day that I’ve had these for breakfast (partially thanks to my decision for making 3 batches) and I actually really like them! They are filling but not super heavy in the tummy! 

And my son LOVES sharing them with me! 

They also go great with your morning coffee! 😘
